Recipes in styyyle! (continued)...the KILLERS of the night!! miam!

I am lucky to have a boyfriend that loves cooking as much as I do. So the day before the party we started preparing the food that we KNEW would be amaaazing!!!




MINI VEAL BURGERS

I love making burgers!! (see previous blog post about the tuna burger hehehe) so I decided to make some mini ones for my guests! Very easy to make!



You will need:
-big big hot dog buns (I used the brand D'Italiano) cut into 3 equal parts.
-Tomatoes, cut into slices of about 1/4 inch.

For the meat
-Ground veal (or chicken, or beef, or pork)
-1 egg
-1 cup of bread crumbs (if you don't have any, wet 2 pieces of bread...same thing)
-1 medium onion, chopped very thinly
All of the remaining ingredients, you add the amount that you prefer :) just to give it enough taste
-Ketchup
-Mayo
-Dijon mustard
-Fresh italian parsley (or dried parsley will be just fine)
-Spices! I used Goya Adobo (as always) and garlic powder but you can use steak spices, salt, pepper etc...

For the spicy mayo:
-Mayonnaise
-Tabasco
-Garlic powder
-Salt and pepper (or Goya Adobo...)

In a large bowl, put the meat with all the ingredients.
Relax. Take a deep breath...then...
With your CLEAN HANDS, mix all the meat with its ingredients until everything is well incorporated (wasn't that bad huh?
Then make mini meat patties, about two inches wide and one inch thick. Fry about 3 minutes on each side. 

On the other hand, mix the ingredients from the spicy mayo.

Then, put the mini burger patty on the pre cut bread, add the slice of italian tomato, then the spicy mayo. ENJOY!



ASIAN CHICKEN BROCHETTES

Those were great! A mixture of sugar and spice with a touch of heat! 


You will need:
-Chicken (we used chicken thighs, cleaned them, removed the skin and chopped them...super long and annoying...so just use chicken breasts of boneless-skinless chicken if you wanna save some time)




-about 1 cup of Peanut butter (I used the creamy one)
-2 cups Chicken broth (only 99 cents at Maxi!)
-hoisin sauce or soy sauce
-Salt and pepper + garlic powder
-1 tablespoon of Lime or lemon juice
-2 onions: One of them shopped really thinly, and the other one chopped into big pieces (to put on the brochette stick)
-OPTIONAL: 2 tablespoons of tabasco sauce, sesame oil (I put the sesame oil vinaigrette), and big pieces of sweet red pepper


SOOOOO....
Cut the chicken in pieces that about half an inch to an inch. Reserve.
In a big bowl, mix all the remaining ingredients (except the onion chopped in big pieces), the chicken broth, peanut butter, the thinly sliced onion etc.
Add the chicken in the mix, make sure every piece is totally dipping in the sauce. 
Cover the bowl with saran wrap, put in the fridge and let marinate from 3 hours to overnight. 


THEN!
-Remove the marinade from the fridge.
-On brochette stick, put one piece of chicken, then one big piece of onion. Repeat 2 to 3 times on each stick, so that each has about 3 pieces of chicken and onion.
-Fry or grill brochettes for about 3 minutes on each side, all that to give it a nice color.
-Put the brochettes in the oven on 350 degrees for 20 minutes. Serve!


P.S. You could use the peanut butter marinade to make a sauce. All you have to do is put it in the pan for about 2-3 minutes on high heat.
